Vegetable Tasting

Cut up vegetables: carrots, broccoli, cauliflower and green beans.  Cook half of the carrots, broccoli, cauliflower and green beans and leave the rest raw.  Taste and discuss the difference between cooked and raw vegetables.  Ranch dressing can be used to dip the raw vegetables in.
 

Southwestern Chicken and Black Bean Salad

  • 10 cups torn romaine lettuce
  • 15 ounce can black beans, rinsed and drained
  • 1 1/2 c chopped cooked chicken or turkey
  • 1 1/2 c red and/or yellow cherry tomatoes cut in half
  • 1/2 bottle reduced calorie Caesar salad dressing
  • 2 teaspoons chili powder
  • 1/2 teaspoon cumin
  • 1/2 c broken tortilla chips
  • 2 Tablespoons snipped fresh cilantro or parsley
  • Fresh cilantro sprigs (optional)

In large bowl combine romaine lettuce, black beans, chicken (or turkey) and tomatoes.  For dressing, in a small bowl whish together salad dressing, chili powder and cumin.  Pour dressing over salad, toss gently to coat.  Sprinkle with tortilla chips and snipped cilantro.  If desired, garnish with cilantro sprigs.
